The changes in color represent an increase is white matter and a commensurate decrease in brain matter.  As children go through the teen years, they "prune" away unnecessary brain cells to make more efficient neurological conditions.  This decreases overall grey matter.  At the same time, they also wrap their neurons in more mylein, which insulates the nerves and increases white matter.
